In Italy they call sparkling Negronis, Negroni Sbagliato, and make it with Prosecco.
Saxon and Parole has their own special version of everything they make and this one made with Champagne is a delightful refreshment.
The Gin: Good Old Beefeater

We liked this take on the Negroni that is a variation on Negroni Sbagliato. In Italian Sbagliato means "messed up" or "mistaken." The drink came about when a bartender of the famed Bar Basso in Milan grabbed the prosecco instead of the gin. The rest is history. Bon Apettite
If you are lucky you might be there on a night when they have Negronis on tap. Currently it looks like they have Manhattans on tap, which are quite good as well
The bar menu is first rate.
And the dining room very inviting.
