We were asked to bring something to share to a tasting dinner with a group of friends at the exciting new Mexican restaurant Villalobos. So we created this fabulous Negroni Sangria finished with Bittermens Xocolatl Mole Bitters...
The Base: Cavicchioli 1928 Sparkling Malvasia
The Vermouth: Cocchi Americano
The Amaro: Aperol
More: Vecchia Romagna Brandy, Pears, Apples and Lemons, finished with Bittermens Xocolatl Mole Bitters
The Recipe:
We started with locally harvested pear and apple, one of each, cleaned and slices and placed in a jar with 8 ounces of Cocchi Americano white vermouth and let them steep for a few hours in the fridge.
Meanwhile we had the sparkilng Malvasia, the Aperol and Vecchia Romagna Brandy chilling as well.
Shortly before dinner we poured into a good sized pitcher, 70 ounce, the full bottle of Cavicchioli Malvasia, the vermouth with fruit, 4 ounces of Aperol, and 3 ounces of brandy.
The Aperol gave the drink another element of flavor and a beautiful color. The brandy gives a kick, and you can add more to taste.
We added lemon slices at the end and were ready to serve.
As we poured each drink we added two drops or three of the Bittermens Xocolatl Mole Bitters which gave the drink the perfect finishing touch.
Needless to say the drink was a total success.
