The Gin: Caledonia Barr Hill Tom Cat barrel aged gin
The Vermouth: Dolin Rouge
The Amaro: Vecchio Amaro del Capo
More: Fonseco Porto Terrra Bella, Employees Only Grenadine, Lemon Wedge
So here we go. Desperate to create a new Negroni for a rainy, snowy, cold night, with nothing new in the booze collection I had to let the creative juices flow. Tried a few variations and arrived on a winner.
The gin, started with a London dry, but needed something with more body to fight the chill. An Old Tom to the rescue. Caledonia makes a damn fine one with a touch of honey. Just Right.
The vermouth, I knew I had to go simple but good. Dolin is the perfect choice.
OK on the the Amaro? I had already decided I would be using the Port and the Grenadine. Needed an Amaro that had punch but not too sweet. Yes Amaro "Bitter" can be sweet, full of fruit! Vecchio Amaro del Capo goes more in the spice and nutty direction. Nutmeg, hazelnut, delightful flavors.
Here is the mix for two cocktails that worked out well.
1 1/2 ox Bar Hill Old Tom
1 1.2 oz Dolin Rouge
1 oz Vecchio Amaro del Capo
3/4 oz of both Fonseco Porto Terrra Bella and Employees Only Grenadine
Stirred well over ice. Poured over a big cube and garnished with a lemon wedge.
