The Spanish Vino Vermouth Atxa (Acha) is the star in this cocktail with bright complex flavors, accented with fresh rosemary and the cardamom bitters.
The Gin: Citadelle Slow Distilled French Gin
The Vermouth: Aixa Vino Vermouth Bianco and Rojo
The Amaro: Good Old Cynar Amaro
More: Crushed rosemary on the stem, Scrappy's cardamom bitters, slice of orange
The measurements for each cocktail are as follows I doubled to make a full shaker full
1 1/2 oz Citadelle Gin
3/4 oz Atxa Bianco
3/4 oz Atxa Rojo
1 oz Cynar
Stir well over good ice
Crush the rosemary with a muddler over a large ice cube to release the aroma, add two or three drops of the bitters. Pour in the stirred ingredients. Magnificent.
The Vermouth

Acha’s Vino Vermouth Rojo is made in accordance with an old recipe passed down through the Acha family.
Tasting Notes Rojo: It is made from a blend of a neutral wine and alcohol macerated with a selection of traditional botanicals including wormwood, gentian, and cherry. Licorice and wild herbs framed by bitter components and a markedly wild berry fruit.
Tasting Notes Bianco: It is made from a blend of a neutral wine and alcohol macerated with a selection of traditional botanicals including wormwood, gentian and bitter orange. Fresh, floral aromas followed on the palate by a hint of sweetness and bitter flavor framework.
